Lead Applications Scientist, Bars and Snack Foods ? Decatur, IL Research & DevelopmentThis is an exempt level position.
Position Summary:The research group of Archer Daniels Midland Company is actively seeking an individual to serve as Lead Scientist in Bars and Snack Food Applications.
The position will serve two primary functions: Serve as ADM expert in bars/snacks, working closely with ingredient specialists to optimize current or new specialty ingredients for bar and clusters systems; Provide formulation/production expertise to customers using ADM ingredients in these applications.
This scientist should have primary experience in bar/cluster formulation and production but be familiar with the manufacture of other extruded and sheeted snacks including chips and crackers. Job Responsibilities: Evaluate novel ingredients for their suitability in snack bars and other snack applications with respect to stability, processing & eating qualityProvide feedback to ingredient experts on existing or new functional ingredients to optimize their performance in bars/cluster systemsFormulate snack and nutrition bar prototypes using ADM ingredients to achieve specific consumer nutrition and flavor targetsAssist customers in the production of snack applications, including attending plant trials, providing troubleshooting as neededParticipate on the bar applications platform team globally to share expertise and information across the company in order to drive more unique, high quality bar and snack applications to the customerWork closely with sensory science department to generate data needed for marketing purposes and to understand flavor and texture changes in applications over their shelf-lifeProvide customers with training in the use of ADM ingredients in bars/snack systems through presentations and bench/pilot experimentationAssist customers in product scale-up, partnering with co-manufacturing plants and food innovation incubatorsGain and maintain excellent knowledge of current snacks market, manufacturers, and customer trends by working closely with ADM marketing groups and attending trade shows related to the snacks category
Job Requirements: Bachelor of Science Degree in Food Science or related field of studyMust have 5-10 years? experience actively developing snack, nutrition, or breakfast bars such as nougat, particulate, co-extruded, etc.Strong expertise utilizing functional ingredients such as proteins, fibers, and sweeteners in bar applications
Must be willing to work on the bench actively developing/evaluating snack applicationsPossess knowledge of formulation and processing to change flavor, color, texture, nutritional value, or physical, chemical, and microbiological composition of bars and other snack applicationsPossess excellent project management skills to prioritize projects and move multiple projects to completion simultaneouslyApply for this job.
